The oli nou season has begun — Catalan for “new oil”. We are gathering this harvest’s oil from small farms and cooperatives in Catalonia and will open sales in the coming weeks. Leave your email and we’ll tell you first.
What oli nou is
Oli nou is made from the first olives of the season, from October to January, while they are still green or just starting to turn.
It comes out a deep green, pleasantly bitter, with a peppery kick at the end. It is made for only a few weeks a year, and it shows its character best when freshly pressed.
How to tell
Four things you can check yourself, wherever you buy your oil.
Look for the harvest date or season on the label (for example, 2026/27). A best-before date does not tell you when the olives were picked.
Light spoils oil. A dark bottle or a tin protects it; a clear bottle under shop lights does not.
A young oil from green olives is often bitter and catches a little in the throat. That is not a flaw: it is a sign the oil is fresh.
At home, keep it tightly closed in a cool cupboard, away from the hob. Once opened, it is best used within a few months.
How we’ll choose
We are not selling anything yet. These are the rules we will use to choose each oil:
Where it will come from
We will look for oil in Catalonia’s five olive-growing areas with a protected designation of origin. We are not naming farms yet: we want to visit them first.
The dry interior of Lleida, home of arbequina. Fruity, gentle oils, often with a hint of green almond.
Mountains around the Montsant, inland from Tarragona. Olive trees on terraces; delicate, fruity oils.
High, windy land near the Ebro. Empeltre rules here, giving sweet, rounded oils.
Around the Ebro delta, with olive trees hundreds and even a thousand years old. Oils with more body and bitterness.
In the north, between the tramontane wind and the sea. Arbequina and local varieties; fresh, grassy oils.
